Hearty Beef and Vegetable Casserole

Ingredients
 

  • 2 large potatoes, cut into large bite sized chunks (approx 1 cup)
  • 3 carrots, sliced (approx 1 cup)
  • 1 medium sweet potato, cut into large bite sized chunks (approx 1 cup)
  • 1/4 butternut pumpkin, cut into large bite sized chunks (approx 1 cup)
  • 1 large onion, diced
  • 200g green beans, chopped
  • 1 cup frozen green peas
  • 1 x 400g can chopped tomatoes
  • 1 x 420g can condensed tomato soup
  • 150g fruit chutney (I use the Rosella jar brand)
  • 1 tsp curry powder
  • 1 tbsp worcestershire sauce
  • 1 tsp vegemite
  • 1-1.5kg of chunk steak or similar casserole beef diced
  • 2 tsp flour + salt and pepper to season

Instructions
 

  • Add all the vegetables to slow cooker and mix to combine
  • Combine tomatoes, soup, chutney, curry, sauce and vegemite in bowl, ,mix well and set aside for now
  • Add diced beef to large plastic bag with seasoned flour and toss to coat beef in flour. Add beef to slow cooker on top of vegetables
  • Pour over the tomato mixture and stir to combine.
  • Cook on high for 7hrs (see notes)
  • Serve with crusty buttered bread

Notes

  • You can vary vegetables to what you have on hand. This is a great 'empty out the vegetable crisper at the end of the week' type of recipe 🙂
  • This fills a 6L slow cooker to the top, hence the long and high cooking time to achieve tender results. You could also cook on low all day (I'd estimate approx 10hrs at least, so great for working families cooking from morning until home time)

  3. Loved this recipe and so did my family! I left out the peas but added corn, celery and some mixed herbs. Surprisingly, it didn’t taste of tomato! Such a versatile recipe! We also had plenty of leftover which I added mashed potato and cheese on top of for a second meal. Budget friendly!

    This recipe is a winner. Made this 6 days ago. I changed 1 ingredient from condensed tomato soup with crushed tomatoes, followed the rest of the recipe. Will be making it regularly.

  12. I’m making this for the second time as it was a hit with my husband and kids and so easy! I just leave out the chutney and add a little brown sugar instead

  13. Yummmmmyyy. Great way to use up leftover veg. Very tasty base. We have with bread or sometimes I make & add cheesy dumpling 1.5h before it’s done. Very rarely are there any leftovers.

  14. Can you either substitute Worcestershire sauce for something else, or could you just leave it out altogether.

  15. If I left out the chutney & Vegemite, would it still be ok? Or is there anything else I could add to sub them?

  18. My family loves the Hearty Beef sauce in a jar from the supermarket. Well I had beef at home but no sauce so I looked up beef sauce and this came up. I’m so happy to have found this. I had every single ingredient in my cupboard except the tomato soup. I didn’t leave it out, I just used a few tablespoons of tomato paste mixed with flour and then 400mls boiling water and then the other sauce ingredients. It tasted wonderful. I’m sure they are going to love eating it tonight. Thank you so much!!!

  20. Hubby requested a beef casserole for dinner and this did not disappoint! I just used veggies I had so no pumpkin or sweet potato but added some capsicum and celery. I used about a quarter cup of homemade fruit chutney as that was all I had but the rest as per the recipe. Delicious! We just had it with toast to mop up the delicious gravy. ??????????

    I didn’t have tomato soup so added tomato paste, water and squirts of tomato and bbq sauce for sweetness..

  22. Yeah, it was alright. Only thing I didn’t do was to cut off all the fat from meat. Cause afterwards I found there was a lot of fat when cooked on surface. Yes I’ll have to skim it off.

  25. Hubby enjoyed it plus one of my “adopted child” as well. I added some minced garlic, I did accidentally drop my container with the sauce in while mixing and lost some so added a sachet of tomato paste and a extra table spoon of Worcester sauce to make up some liquid

  26. This was for sure soo tasty. I found it a little too sweet for me but I think I was a bit heavy handed on the chutney. The kids devoured it though so I can’t complain! Will try again with less chutney.
    It is extremely saucey so you can go heavy on the veggies and meat and I needed to thicken with flour

    Made this last week and it was absolutely delicious. My husband loved it and there was enough to freeze for another 2 meals for us 2. We had ours with a crusty bread roll as there was a lot of vegetables in the casserole.

    Put on a batch before work yesterday and came home to the delicious aroma! Family were so excited by the smells and this did not disappoint! Because we were out all day, I popped it on low at 7.00am and came home just before 5.00pm and it was perfectly cooked. Will do this one again for sure, so easy, so delicious and so hearty!

  31. Absolutely delicious. I used homemade relish in place of the chutney and let out the pumpkin and sweet potato due to personal preference. I cooked in low for 8 hours. It was super delicious and made enough for 2 meals for our family of four reasonable eaters. A loaf of crusty bread paired with it very nicely.

  32. Really tasty I put everything in that was in recipe but omitted the beans ( I hate beans) I added extra worstershire sauce and 1/2 cup of water and cooked over night . I am not much of a meat eater but meat was so tender, there was so much I gave neighbours some and made the rest into pies with mash potatoes on top delicious ?

    Yummmm Yummm, followed recipe to the exact ingredients and added in a can of champigon mushrooms in the last hour and half, have frozen 2 x 1.5 ltr containers and had a delicious dinner last night.

    We had this last night with a very few alterations (hubby doesn’t eat pumpkin or sweet potato) and it was delicious. I used a large jar of passata sauce instead of chopped tomatoes. We score all our new recipes to know what to try again or not. We scored it 9 out of 10.

  39. OOHHMMYY GOSH first time making this recipe. Simply full Of deliciousness in a bowl and only 1 sc to wash up. Big hit with hubby and he has now asked for it as a regular favourite. Giving it a 10/10.
    The only extra thing I added was 2 teaspoons dried thyme as I love to use herbs to my cooking.

    Loved it. I was nervous about cooking on high for 7 hours but it turned out perfectly. Super yummy with some crusty bread. Great amount for 2 meals for us. It would also work great to do some extra meals to freeze or pack for lunch through the week.

    Note to self…..read entire recipe including notes BEFORE prepping. I only have a 3.5 litre slowcooker. Only meat, carrot, onion and sauce would fit. Will cook all other veg separate and do some mashed potato. Taste test and it is absolutely delicious. Will need to halve next time or buy a bigger slowcooker ?. I cooked on low as I was going to be out all day. House smelt divine on my return. Checked meat after 9 hours and it was so melt in the mouth tender.
