
Cheesy Mexican Mince and Rice
A tasty and budget-friendly ,filling, Mexican meal the whole family can enjoy!
Equipment
- 5L slow cooker
Ingredients
- 1 kg beef mince
- 1 large red capsicum, diced
- 1 large onion, diced
- 30 gram sachet taco seasoning
- 375 gram jar Enchilada sauce
- 3 cups COOKED brown rice (see notes)
- 2 cups grated cheese (Mexican blend is great, otherwise cheddar or tasty)
Instructions
- Slow cook the mince, capsicum, onion and taco seasoning on low for 3hrs – breaking apart any meat lumps during or at end of this cooking time (I use a plastic potato masher for great results)
- Add Enchilada sauce, stir through, continue cooking on low for an additional 1hr
- Stir through cooked rice to combine well, flatten, then top with cheese and cook for an additional 15mins or until cheese well melted
- Serve with a green leafy side salad
- NOTES: I use one large 450g sachet of instant rice for 3 cups of cooked rice in 2.5mins. We prefer brown rice but white would be ok too if your prefer 🙂

this is very tasty. the kids had in wraps as burritos & we had with leftover Nacho potato bake..very tasty. this serve was enough to feed 6 with a leftover serve.

Absolutely delicious. I doubled the recipe as I made it for a crowd. Home made Enchilada Sauce (from home grown tomatoes and garlic) and homemade taco seasoning. Served it with rice, corn chips, cheese, guacamole and sour cream on the side. The Crock Pot makes a good serving dish. Everyone loved it
