Equipment

  • 1.5L or 3L slow cooker

Ingredients

  • 1 kg skinless chicken thigh fillets
  • 1 tsp Minced garlic
  • 1 tsp minced ginger
  • 1 tsp Sesame oil
  • 1/4 cup smooth peanut butter
  • 1/4 cup Hoisin sauce
  • Optional: Cornflour to thicken

Instructions

  • Place chicken into slow cooker. Whole or cut into strips.
  • Combine all other ingredients and pour over chicken.
  • Cook on low for 4hrs
  • In the final 15mins of cooking time, stir through a cornflour and water slurry if you wish to thicken the sauce
  • Serve on fried rice, or with your favourite steamed vegetables.
  • Note: I recommend thigh fillets for best results, however you can swap to breast if you prefer but reduce cooking time by 1hr as it tends to be more dry.

  1. Chicken cooked to perfect texture using the instructions for breast rather than thigh.

The flavour is nice, but not as full flavoured as I expected. I did use 1.6 kg rather than 1 kg breast and didn’t adjust other quantities so maybe the extra juices from the extra chicken diluted it down. I also used 2 tblspn cornflour and water to thicken rather than 1 so that may have impacted too.

Will definitely make again because I do like the flavours, will just add more of them next time!! Hopefully will get that nice colour that’s in the above photo, as mine was vey pale.

    Overall a good meal ?

Almost doubling the meat would definitely be the cause of the muted flavours, colours and consistency.
What I’d suggest Catherine for that volume chicken is to double everything else next time and I think you’ll find the flavours much better 🙂
Enjoy and thanks for taking the time to leave your feedback x

Really delicious, especially given there’s are so few ingredients. Next time I’ll double the recipe, the above quantities fed our family of 4 adults with no left overs, which is shame because it was so yummy. ?
I did add a splash of fish sauce & a chicken stock cube.
    Thanks Paulene

Loved this. Followed the recipe using 750 grams of thighs. I like mine saucy, so did add the corn flour slurry in the last half an hour of cooking. Also added some grated zucchini and carrot.
Leftovers in the freezer for the next few weeks.

Excellent result. I used chicken drumsticks which is what I had. I also added ½ tin coconut milk,
a couple of teaspoons of Chinese Crispy chilli oil, a diced carrot and a sweet potato. Delicious. Thanks Paulene. A winner

Absolutely delicious! I used 500g chicken breast and bulked it up with diced onion, capsicum and Asian greens. I also added half a ton of coconut milk in the last hour and used the tea towel method.. I can’t wait to make this dish again, it was so good.

This was very tasty. Of course I had to add chilli. Husband still thought it a bit sweet. I also added carrot at the start, broccoli & capsicum 30 mins before the end. Served with noodles. A simple but flavoursome meal.

Delicious, easy recipe. Great for lunch on a cool day or dinner anytime. I added 2 onions I needed to use and also 1/3 red capsicum. Will serve with rice and baby corn, carrot and celery.

Thanks so much for leaving your feedback and great sides suggestions Tina – I appreciate it so much 🙂

  12. Nice. Super quick and easy to prepare. I subbed with garlic replacement powder (will use less next time) and fresh ginger. I only used about 730g of chicken breast but kept the sauce as is. My sauce didn’t look as luscious but it was tasty. Maybe because I didn’t add corn flour so doesn’t look silky. Cooked in my baby slow cooker for 3 hours. Will either do it in a bigger cooker next time or stir a couple more times as it was in a bit of a clump.
