Chicken Mornay

A beautiful slow cooked chicken and broccoli, in a delicious cheesy white mornay sauce!

Equipment

  • 3.5L Slow Cooker

Ingredients
 

  • 300 ml cooking cream
  • 1/2 cup mayonaise
  • 420 gram can Campbells Cream of Chicken condensed soup
  • 1 tbsp Vegeta seasoning
  • 2 tsp dried mixed herbs
  • 1 kg skinless chicken thigh fillets, diced
  • 2 cups broccoli florets, cut small
  • 2 cups -Shredded cheese.

Instructions
 

  • Add the soup, cream, mayonnaise, vegeta and mixed herbs in slow cooker and combine to smooth mixed.
  • Add diced raw chicken
  • Slow cook on low for 3hrs
  • Add broccoli, stir gently to combine and slow cook for an additional 1hr 30mins
  • Add cheese and stir, and slow cook for an additional 15mins
  • Total cooking time is 4hrs 45mins on low
  • Serve on cooked rice
  • NOTES:
    ~ Cooking cream is a specific cream that resists splitting when heated. If you must use regular cream, add 1-2 tsp of cornflour to it first before adding, to help prevent splitting. More info HERE
    ~ Chicken thigh fillets can be substituted for diced leg fillets or diced breast fillets. I do find breast can be a little dry though so definitely recommend thigh.
    ~ Vegeta is a dry gourmet vegetable stock powder available in all supermarkets. It's a lovely rich flavour and highly recommended for this recipe.
    ~ For the shredded cheese I used a Pizza Blend (Mozzarella, Cheddar and Parmesan)

    Made this for lunch today . Really delicious but a tad salty for our taste but that will be easily fixed next time by not putting as much vegeta Will definitely be making this again

    This was so easy to make and yummy.
    I didn’t have enough broccoli, so also used red capsicum and peas & corn.
    I didn’t know what Vegeta was (let alone have it in my pantry :-)) so used x2 veg stock cubes.
    Rereading the recipe tonight to write this, I have just realised I completely forgot to put the cheese in! But it was still a hit and yummy without it, so I look forward to trying it the next time I make it – with cheese.

  4. I did this yesterday and loved the result.
    I made a couple of changes to the recipe to match what I had in the fridge:
    – Halved the amount of broccoli and added the same amount of cauliflower
    – Added mushrooms
    – Added bacon
    So it became more of a casserole than a pure mornay, but it was delicious.
    I am on leftovers for the next few days now.

    I made this yesterday using a cooked BBQ chicken & it worked very well. I did find it a bit salty so will reduce the amount of Vegeta next time. I added some lemon juice to reduce the salt & that made a big difference. Will definitely cook this again.
