Raspberry & White Choc Cookie Slice

A lovely, sweet treat you can enjoy with or without vanilla frosting!

Equipment

  • 6L slow cooker – I used THIS one
  • Baking Paper

Ingredients
 

  • 2 x 340g Woolworths Vanilla Cake Mix (dry, add nothing)
  • 2 Eggs
  • 150 grams butter, softened
  • 200 gram White Chocolate drops/bits
  • 100 grams raspberry lollies (eg Allens bran), each cut in half
  • Optional: Vanilla Frosting

Instructions
 

  • Line slow cooker with baking paper
  • Combine all ingredients well and spoon onto baking paper and flatten (note it has a cookie dough consistency, not runny like a cake mix)
  • Cook with Tea Towel Trick for 2hrs 15mins on HIGH
  • Use baking paper to carefully lift out the slice and move to wire rack to cool. It will initially be a little soft but will firm up on cooling (like a cookie).
  • Slice into large squares
    Optional: Top with vanilla frosting or enjoy as is. I use the ready-made tubs of frosting to make it even easier!

    This was really delicious! I’ll admit I was skeptical at first, making a slice from two packets of cake mix, but it came out really well! Crispy around the edges and fluffy in the middle. I used glacé cherries instead of raspberries lollies as I had some left over from Christmas and it worked a treat! I’ll definitely be making this again, 5* !
