Pint size 3 ingredient Xmas Cake

Lovely little fruit cake perfect for a Christmas gift or morning tea. Modified version of the 3 ingredient Christmas fruit cake. Fits perfectly in the 1.5L slow cooker.

Servings 8 small slices or 4 large slices

Ingredients
 

  • 300gm mixed dried fruit
  • 300ml liquid (I used 200ml chocolate milk 100ml Baileys)
  • 1 cup SR flour

Instructions
 

  • Soak dried mixed fruit in container overnight with 300mls of chosen liquid.
  • Sift 1 cup SR flour into the mixture but by bit until combined.
  • Grease 1.5L slow cooker bowl with butter and coat in flour or line with baking paper.
  • Pour mixture into SC.
  • Cook for 2 hrs on high with tea towel under the lid (turning the bowl occasionally to avoid any hot spots)
  • You can substitute the liquid for anything you like! Rum + orange juice, iced coffee, etc.

    I made this today with orange juice & brandy. It burnt a little around the edges, I had kept turning the bowl so I think I will double layer the baking paper next time. Was still a nice cake, nice & light. Doing it with chocolate milk & baileys tomorrow x

    I mad mine today 1kg fruit 750mils orange mango juice and brandy mixed together and two cups SRflour cooked on low 8 hours water halfway up the side of tin teatowel worked great
    First time ever cooked in slow cooker

    I’ve now made over a dozen of these cakes over the last 3 months and love them .
    The only thing I change from time to time is to use gluten free flour and Xanthan gum and you can’t taste the difference.

    Hello, I am doing this cake tomorrow. But my problem is that when I put water in the sc the water enters into the cake tin. Is it ok or shall I wrap the foil around the tin before putting into the sc ? Thanks in advance ????

    Love this cake. I never ate fruit cake until I made this one for my Mum and had to try it for myself. So so good. Easy to make and a great size to gift to people at Christmas.

    So delicious! I have made the full size cake before which was yummy. This smaller size was just as delicious and perfect for less people in the house. Great to have with a cup of tea or with custard. Will definitely be making again.

    I just made the baby one
    250ml choc milk with 50 ml rum
    Definately needs more rum next time
    Followed recipe and came out perfectly.
    note – it did not soft on the top initially, skewer proved it was cooked all the way thru
