
Stuffing Top Potato Bake
A creamy, deluxe potato bake with a surprising, seasoned stuffing mix topping!
Equipment
- 3.5L slow cooker – I used THIS one
- Non stick cooking spray
Ingredients
- 1 kg washed baby potatoes, skin on
- 1 small brown onion
- 4 rashers of streaky bacon (125g)
- 300 ml cooking cream
- 1/2 cup milk
- 1 tbsp Minced garlic
- 30 gram sachet Spring Vegetable Simmer Soup (no water added)
- 1/2 cup seasoned stuffing mix (box mix)
- 1 cup grated tasty or cheddar cheese
Instructions
- Thin slice potatoes and onion. Slice bacon into thin strips.
- Spray slow cooker bowl with cooking oil spray
- Add 1/3 of potato slices to slow cooker and top with the onion slices.
- Add 1/3 of potato slices and top with bacon slices.
- Add final 1/3 of potato slices.
- In a jug, combine cooking cream, milk, garlic and spring vegetable mix. Pour this over the potatoes.
- Cook on LOW for 6hrs. No tea towel trick required.
- 40mins before end of cooking time, sprinkle over the stuffing mix
- 15mins before end of cooking time, sprinkle over the cheese to melt.
