Thai Pork in a Peanut Satay Sauce

This was a mild Thai taste that is great for those who don’t like things overly spicy. However, you could certainly increase the curry paste if you prefer things HOT! 😊

Equipment

  • 5L slow cooker

Ingredients
 

  • 500 grams diced pork
  • 400 ml can of coconut milk
  • 1 tbsp Cornflour
  • 1 tbsp Soy sauce
  • 1 tbsp Brown sugar
  • 4 tbsp Peanut Butter
  • 4 tbsp red Thai curry pasta – I use Ayam brand
  • Juice of 1 small lime
  • 500 gram bag frozen veg THAI variety (often contains carrots, green beans, broccoli, corn & bamboo shoots) – defrost these vegetables in fridge while recipe is cooking

Instructions
 

  • Add pork to slow cooker
  • Combine all other ingredients except vegetables and blend together.Β  Pour this sauce over pork.
  • Cook on low for 4.5hrs with tea towel trick in place
  • Add the thawed vegetables, stir, remove tea towel trick at this point and cook for an additional 30mins
  • Serve with cooked brown rice

    I made this tonight i used chopped up sausages instead of pork. And its a massive hit I also added 1 fresh chilli
