Chocolate Croissant Pudding

After Christmas we had an excess of croissants left to use up so this was the perfect decadent reincarnation of those!
Thankfully they are available in stores all year round though so you don’t have to wait until Christmas 😉

Equipment

  • 1.5L slow cooker
  • Non stick spray oil

Ingredients
 

  • 4 croissants
  • 1/2 cup choc melts
  • 4 eggs, whisked
  • 2/3 cup castor sugar
  • 200 ml cooking cream
  • 100 ml milk
  • 1/2 tsp Salt
  • 1 tsp vanilla

Instructions
 

  • Spray slow cooker bowl lightly with non-stick oil spray.
  • Tear croissants into chunks and add half of them (2) to the slow cooker. 
  • Scatter half the choc melts (1/4 cup) on top.
  • Add the other half of the croissant chunks then repeat with the remaining choc melts on the top.
  • Combine all other ingredients in a jug, whisk together, then pour over the croissants in slow cooker.
  • Cook on low with tea towel trick in place for 1hr 40mins or until egg mix is set around croissants and not visible as liquid when you press a spoon down the side of the pudding to look deeper.
  • Note: We use a little 1.5L slow cooker. If you were to use a larger slow cooker, times will vary.
  • Serve immediately when cooked so chocolate is still melted and gooey goodness and top each bowl with a dollop of thick cream or even ice cream & enjoy!
