  • 5.5L Slow Cooker

Ingredients
 

  • 500 grams beef mince
  • 400 grams chopped tomato
  • 400 grams kidney beans (washed & drained)
  • 2 Onions – diced
  • 1 red capsicum, diced
  • 4 cloves Garlic, minced
  • 4 tbsp Tomato paste
  • 1 Beef stock cube
  • 150 mls water (for stock cube)
  • 1 tsp Oregano
  • 2 tsp Coriander (fresh or dried)
  • 2 Bay leaves
  • 2 tsp Cumin
  • 2 tsp chilli powder
  • 1 tsp smoked paprika
  • 1.5 tsp Sweet paprika
  • 1.5 tsp Worcestershire sauce
  • Half tsp Brown sugar
  • 1 tsp Salt
  • 1/4 tsp Pepper
  • 3 tbsp Corn Flour
  • *Add one chopped chilli if wanting extra spice

Instructions
 

  • If you have a slow cooker, use the sear function, if not start in pan.
    Add onion & capsicum with some olive oil to slow cooker (on sear function)/pan.
    Add mince & break up lumps
    Add coriander, oregano & spices.
    Cook until meat is browned.
    Add to slow cooker if using a pan, if using slow cooker, change function to cook on LOW.
  • Add garlic, fresh chilli if using & tomato paste. Stir.
  • Add flour, salt, pepper & sugar & stir well.
  • Dissolve stick cube in hot water & pour over.
  • Add chopped tomatoes, kidney beans, Worcestershire sauce & bay leaves & stir well.
  • Cook on low for 6 hours.

  1. This is DELICIOUS ! Will go in the cookbook for sure !!! A bit of pre-prep required as I don’t have a sear setting on my old slow cooker, but I did the pre-prep the night before and popped it in the fridge overnight. Set it on to cook about lunchtime, and by 6.30pm it was done. I was a bit worried about adding cornflour at the start, and what seemed like a lot ! But it turned out perfectly – I shouldn’t have doubted it. Recommend !

    5 out of 5 stars for us.
    l cooked this with an extra green chilli, me ght replace with a red chilli next time. A tablespoon of Greek yoghurt made it ok to eat for 2 that don’t like it too hot.
    Will definitely be on rotating during winter.

    This was so yummy. I forgot to leave a review the first time I made it, but it was so good I had to make it again!! The first time I made it I served it over tortilla chips and sprinkled cheese on top, then melted the cheese in the oven, plus a big spoonful each of sour cream and guacamole. This time I served it with rice and sour cream. Both ways were a hit with the family.
