Bacon lattice chicken and pine nut meatloaf

Ingredients
800gms of bacon rashes
750 gms of chicken mince
1 tbs of olive oil
1 brown onion finely chopped
2 garlic cloves
1/3 cup of pine nuts
1 1/2 cups fresh bread crumbs
3/4 of basil leaves ,finely shredded
1 egg lightly beaten
1/4 cup parsley finely chopped
Instructions
Heat oil in a fry pan
Add onion , garlic and pine nuts
Cook stirring for 8 minutes or until softened
Allow to cool
Combine all ingredients EXCEPT bacon in a bowl and mix well
Mould into shape
Add to a rectangle baking dish and press down
Carefully fold over bacon lattice
Add onto the rack in the slow cooker ,or scrunched up foil balls as this creates a lot of juice
Cook on HIGH for 4 hours or LOW for 6 hours
