Bacon lattice chicken and pine nut meatloaf
Serving: 4
Ingredients
- 800gms of bacon rashes
- 750 gms of chicken mince
- 1 tbs of olive oil
- 1 brown onion finely chopped
- 2 garlic cloves
- 1/3 cup of pine nuts
- 1 1/2 cups fresh bread crumbs
- 3/4 of basil leaves ,finely shredded
- 1 egg lightly beaten
- 1/4 cup parsley finely chopped
Instructions
- Heat oil in a fry pan
- Add onion , garlic and pine nuts
- Cook stirring for 8 minutes or until softened
- Allow to cool
- Combine all ingredients EXCEPT bacon in a bowl and mix well
- Mould into shape
- Add to a rectangle baking dish and press down
- Carefully fold over bacon lattice
- Add onto the rack in the slow cooker ,or scrunched up foil balls as this creates a lot of juice
- Cook on HIGH for 4 hours or LOW for 6 hours

Absolutely loved this!! Was so moist but didn’t fall apart. My son who is a very picky eater absolutely loves this and has asked for it to be made every other week now.
