Ingredients
Cake mix
8oz caster sugar
8oz butter/margarine
4 eggs
8oz self raising flour
4oz mixed fruit with apricots and cranberries (or whatever you like)
1tsp orange extract
1 tsp lemon extract
1 tsp mixed spice
1/2 tsp ground cinnamon
TOPPING
Juice and zest of 1orange
1 cup firmly packed brown sugar
2 cups of boiling water
Instructions
Please note :
The fruit starts off in the cake mix but it ends up with a lovely light citrusy spiced cake with a spiced fruity sauce beneath
1. Combine butter,sugar and egg and flour in mixer
2. Add the orange extract, lemon extract, mixed spice and cinnamon and mix well.
3. Add the mixed fruit into the mixture and combine well , transfer into slow cooker (no need to grease etc)
4. Combine the orange juice, zest, boiling water and brown sugar. Carefully pour the mixture over the cake mix.
5. Cover and cook on HIGH 2 -2.5 hours or LOW 5-6 hours
6. Serve hot with ice cream or custard
I used my 3.5 litre slow cooker
