Self saucing fruity citrus spiced cake
Serving: 6
Ingredients
- Cake mix
- 8oz caster sugar
- 8oz butter/margarine
- 4 eggs
- 8oz self raising flour
- 4oz mixed fruit with apricots and cranberries (or whatever you like)
- 1tsp orange extract
- 1 tsp lemon extract
- 1 tsp mixed spice
- 1/2 tsp ground cinnamon
- TOPPING
- Juice and zest of 1orange
- 1 cup firmly packed brown sugar
- 2 cups of boiling water
Instructions
- Please note :
- The fruit starts off in the cake mix but it ends up with a lovely light citrusy spiced cake with a spiced fruity sauce beneath
- 1. Combine butter,sugar and egg and flour in mixer
- 2. Add the orange extract, lemon extract, mixed spice and cinnamon and mix well.
- 3. Add the mixed fruit into the mixture and combine well , transfer into slow cooker (no need to grease etc)
- 4. Combine the orange juice, zest, boiling water and brown sugar. Carefully pour the mixture over the cake mix.
- 5. Cover and cook on HIGH 2 -2.5 hours or LOW 5-6 hours
- 6. Serve hot with ice cream or custard
- I used my 3.5 litre slow cooker
