Self saucing fruity citrus spiced cake

  • Cake mix
  • 8oz caster sugar
  • 8oz butter/margarine
  • 4 eggs
  • 8oz self raising flour
  • 4oz mixed fruit with apricots and cranberries (or whatever you like)
  • 1tsp orange extract
  • 1 tsp lemon extract
  • 1 tsp mixed spice
  • 1/2 tsp ground cinnamon
  • Juice and zest of 1orange
  • 1 cup firmly packed brown sugar
  • 2 cups of boiling water


  • Please note :
  • The fruit starts off in the cake mix but it ends up with a lovely light citrusy spiced cake with a spiced fruity sauce beneath
  • 1. Combine butter,sugar and egg and flour in mixer
  • 2. Add the orange extract, lemon extract, mixed spice and cinnamon and mix well.
  • 3. Add the mixed fruit into the mixture and combine well , transfer into slow cooker (no need to grease etc)
  • 4. Combine the orange juice, zest, boiling water and brown sugar. Carefully pour the mixture over the cake mix.
  • 5. Cover and cook on HIGH 2 -2.5 hours or LOW 5-6 hours
  • 6. Serve hot with ice cream or custard
  • I used my 3.5 litre slow cooker
