Super Moist Sultana Pud

Ingredients
 

  • 1 and 1/4 cups of water
  • 1 cup of sultanas
  • 1 teaspoon of bicarbonate of soda
  • 1 cup of self raising flour
  • 1/2 cup of castor sugar
  • good heaped teaspoon of mixed spice
  • 50grms of butter or marj
  • 2 lightly beaten eggs

Instructions
 

  • Boil 1 and 1/4 cups of water with 1 cup of sultanas
  • take off heat and add 1 teaspoon of bicarbonate of soda (it will froth up)
  • put in a big bowl and stir in all other ingredients
  • pop into a greased (butter or marj) 1.5lt sc
  • put a tea towel under the lid and cook on high for 1.5 hours
  • if inserting a skewer to test when done the skewer will come out a little sticky - this is done!
  • perfect hot or cold :)
