Ingredients
1 large sweet potato
2 tsp oil
1/4 tsp cracked black pepper
1/4 tsp dried thyme
1/4 tsp garlic powder
1/4 tsp onion powder
Instructions
Line slow cooker with non stick baking paper
Peel sweet potato and cut into thick wedges
Place sweet potato into a large bowl,add all other ingredients and stir to coat well
Lay sweet potato in single layer on baking paper
Cook with
tea towel
under lid on HIGH for 1hr
(times may vary with slow cooker so check they are tender when complete)
Produces a moist, soft wedge... not dry as oven wedges can be, or oily as deep fried wedges are :)
Serve with light sour cream and sweet chili sauce
Also lovely in a salad :)
