Sweet Potato Wedges
Serving: 4
Ingredients
- 1 large sweet potato
- 2 tsp oil
- 1/4 tsp cracked black pepper
- 1/4 tsp dried thyme
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
Instructions
- Line slow cooker with non stick baking paper
- Peel sweet potato and cut into thick wedges
- Place sweet potato into a large bowl,add all other ingredients and stir to coat well
- Lay sweet potato in single layer on baking paper
- Cook with tea towel under lid on HIGH for 1hr
- (times may vary with slow cooker so check they are tender when complete)
- Produces a moist, soft wedge... not dry as oven wedges can be, or oily as deep fried wedges are 🙂
- Serve with light sour cream and sweet chili sauce
- Also lovely in a salad 🙂

The sweet potato does not cook completely with just one hour on high. I have cooked potato wedges in a slow cooker and it takes 4 hours on high to cook.
They do in mine 🙂
