Sweet Potato Wedges

  • 1 large sweet potato
  • 2 tsp oil
  • 1/4 tsp cracked black pepper
  • 1/4 tsp dried thyme
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder


  • Line slow cooker with non stick baking paper
  • Peel sweet potato and cut into thick wedges
  • Place sweet potato into a large bowl,add all other ingredients and stir to coat well
  • Lay sweet potato in single layer on baking paper
  • Cook with tea towel under lid on HIGH for 1hr
  • (times may vary with slow cooker so check they are tender when complete)
  • Produces a moist, soft wedge... not dry as oven wedges can be, or oily as deep fried wedges are 🙂
  • Serve with light sour cream and sweet chili sauce
  • Also lovely in a salad 🙂

  1. The sweet potato does not cook completely with just one hour on high. I have cooked potato wedges in a slow cooker and it takes 4 hours on high to cook.
