Jacket Potato/Baked Potatoes

Ingredients
 

  • As many potatos as you need (I only do 1 layer)
  • 2 tablespoons of olive oil
  • Filling of your choice (cheese/sourcream/garlic butter/bolognaise sauce)

Instructions
 

  • Wash the potato, but leave the skin on
  • Lightly rub with olive oil
  • Prick the potatoes with about 4 -5 knife pricks
  • Lightly spray aluminum foil with spray
  • Wrap each potato in the foil
  • I place a small rack inside my slow cooker and then place the potatoes on top of the rack
  • I then put about an inch of water in the bottom, I do check the water level while it's cooking
  • I cook them for 4:15 on high

Notes

  • Fill them with your own choice of fillings
  • I used a 5.5 Litre Contempo Slow Cooker which cooks fast
  • All slow cookers cook at different temps, and potatoes may take longer in some
  • Check with your manual if you can 'dry-cook' your slow cooker. I prefer to place the water in the bottom, and elevate the potatoes
  • You can top your potatoes with whatever you choose.
