Ingredients
600g lean mince
2 carrots sliced
a handful of snowpeas,
1 diced red capsicum
1 diced onion
broccoli
cauliflower
1 sliced zucchini
a handful of mushrooms
1 400g can diced tomatoes or dice up some fresh tomatoes yourself
2 tblspn red thai curry paste
1 cup beef stock
1 tub tomato paste.
Instructions
Place all veg & mince in slow cooker and mix to combine.
Mix beef stock, curry paste and tomato paste in a bowl and pour over mixture in SC, mix to combine.
Cook on low for around 4-5 hours depending on your SC.
Notes
Serves 4-5
Very low cal and loaded with veg.
Use whatever veg you have at hand and use as much veg as you like.
