Fully Loaded Red Thai Curry Mince
Serving: 4
Ingredients
- 600g lean mince
- 2 carrots sliced
- a handful of snowpeas,
- 1 diced red capsicum
- 1 diced onion
- broccoli
- cauliflower
- 1 sliced zucchini
- a handful of mushrooms
- 1 400g can diced tomatoes or dice up some fresh tomatoes yourself
- 2 tblspn red thai curry paste
- 1 cup beef stock
- 1 tub tomato paste.
Instructions
- Place all veg & mince in slow cooker and mix to combine.
- Mix beef stock, curry paste and tomato paste in a bowl and pour over mixture in SC, mix to combine.
- Cook on low for around 4-5 hours depending on your SC.
Notes
- Serves 4-5
- Very low cal and loaded with veg.
- Use whatever veg you have at hand and use as much veg as you like.

Very easy and tasty, though next time I’ll put twice as much curry paste in the mix. I thickened this with a teaspoon of cornflour in some cold water in the last half hour.
This was great! Very tasty. I agree that next time I would put more curry paste. Also the consistency of mine was more of a cassarole than what is shown in the recipe photo.
