Pumpkin and Red Lentil Soup
A hearty slow cooked soup just like Nan made!

Ingredients
2 cups red lentils rinsed
8 cups water
6 cups pumpkin diced
2 onions diced
1 cup carrot diced
2 cup celery plus leaves (trust me it tastes awesome!!)
4 teaspoons garlic
Salt and pepper
4 tbls vegetable stock
Nutmeg (optional)
Instructions
Add all ingredients to slow cooker.
Cook on LOW for minimum 6 hours (can be left on all day depending on your slow cooker).
Blend/Blitz with blender once cooked.
Cream or coconut cream can be added or a dollop of sour cream is nice too.
But it is nice just as it is!
Pumpkin can be roasted before adding if you have the time also.
This is my Nan's recipe and we lived on this at her house, so good :-)
