Pumpkin and Red Lentil Soup 5 0 5 1

A hearty slow cooked soup just like Nan made!

  • Prep: 15 mins
  • Cook: 6 hrs

  • Yields: 6 bowls approx


2 cups red lentils rinsed

8 cups water

6 cups pumpkin diced

2 onions diced

1 cup carrot diced

2 cup celery plus leaves (trust me it tastes awesome!!)

4 teaspoons garlic

Salt and pepper

4 tbls vegetable stock

Nutmeg (optional)


1Add all ingredients to slow cooker.

2Cook on LOW for minimum 6 hours (can be left on all day depending on your slow cooker).

3Blend/Blitz with blender once cooked.

4Cream or coconut cream can be added or a dollop of sour cream is nice too.

5But it is nice just as it is!

6Pumpkin can be roasted before adding if you have the time also.

7This is my Nan's recipe and we lived on this at her house, so good 🙂
