Pumpkin and Red Lentil Soup
A hearty slow cooked soup just like Nan made!
Serving: 6
Ingredients
- 2 cups red lentils rinsed
- 8 cups water
- 6 cups pumpkin diced
- 2 onions diced
- 1 cup carrot diced
- 2 cup celery plus leaves (trust me it tastes awesome!!)
- 4 teaspoons garlic
- Salt and pepper
- 4 tbls vegetable stock
- Nutmeg (optional)
Instructions
- Add all ingredients to slow cooker.
- Cook on LOW for minimum 6 hours (can be left on all day depending on your slow cooker).
- Blend/Blitz with blender once cooked.
- Cream or coconut cream can be added or a dollop of sour cream is nice too.
- But it is nice just as it is!
- Pumpkin can be roasted before adding if you have the time also.
- This is my Nan's recipe and we lived on this at her house, so good 🙂
