Ingredients
Topside roast beef
1 cup Carrot, diced
2 cups Celery, finely diced
6 sprigs fresh Thyme
2 tspns fresh Rosemary, chopped
3 Bay leaves
2 Spring Onions (Green part only), sliced
1.5 cups Vegetable stock
1-2 cups Gravy, made as per directions
Note--
We usually use a 2-2.5kg piece of Beef
Instructions
Place beef, vegetables, herbs and stock in slow cooker bowl.
Cook on low for 9-10hrs (Contempo 5.5L sc).
Remove bay leaves and thyme stalks.
Shred meat and stir through vegetables,
gravy can be added and stirred through now if you want.
Serve on mash >>> (link below) in rolls with gravy.

Ready to just grab a roast beef from the butcher/freezer and add herbs.
