Lime/Cajun Spiced Whole Chicken

- 1.5-2kg free range whole chook
- 3 limes
- 1tbs rice malt syrup
- 40g butter
- 1tbs coconut oil
- Cayenne pepper
- Cajun seasoning
- Salt
1. Melt butter in a pan and brown chicken all over, spray slow cooker and put some baking paper in. Place chicken upside down in s/cooker.
2. Juice limes and combine with salt, seasoning in the same pan over low heat and add rice malt syrup until melted.
3. Pour over and rub over chicken including cavity. I sprinkled (extra Cajun), salt and the coconut oil over the chicken before covering and cooking.
4. Cook for 6hours low or 3.5 on high.
Notes
I cooked for 1 hour high, 3 hours low. Serve with steamed veg.
Place 2tbs of flour in the leftover juices and whisk until it becomes gravy-like.
