Ingredients
2 chicken breasts or 4 chicken thigh fillets
150ml cooking cream (you could increase this for a saucier result)
125g of Philadelphia Cream Cheese, diced into cubes
50g of semi dried tomatoes, thin sliced
Cracked black pepper to taste
50g baby spinach
Instructions
Place chicken in slow cooker
Pour over cream and then scatter over cream cheese blocks & semi dried tomato
Crack black pepper over chicken
Cook on low for 4hrs with tea towel under lid - The Tea Towel Trick
Remove chicken from pot and cube or slice
While chicken is out of pot whisk cream and any still solid pieces of cream cheese together to make a smooth sauce
Return chicken to pot along with spinach
Allow approx 10mins for spinach to wilt then serve
Low carb serving options include on a bed of spinach or on no-carb konjac pasta ?
