Suitable for the whole family. Not too spicy but does have a little bit of a bite so if your kids will be eating this I would reduce curry powder to 1 tsp
500g diced beef (depending on how many you're feeding)
2 cups beef stock
1 beef stock cube
1-2 teaspoons Italian herbs
1-2 teaspoons curry powder (depending on how hot you like it, I use Keens)
1 onion, roughly diced
Vegetables of your choice, diced (I did potatoes, carrots, and in the last hr I add a half pack of frozen peas and sweet potato)
Salt and pepper to taste
Instructions
Combine all ingredients into the slow cooker
Cook for 6-7 hrs on LOW
Cooking time may vary depending on your slow cooker
In the last hour add peas and sweet potato to preserve their consistency
Serve and enjoy
Notes
You may need to thicken it at the end with 2 tbsps of cornflour mixed with 1/4 cup of water, then add this mix to the casserole, stir and let sit for 15-20 mins with lid off, until desired thickness is achieved
