Chicken Gnocchi Soup

- 500-600g of chicken breast
- 1 onion - diced
- 2 carrots - diced or grated
- 2 celery sticks - diced or sliced
- 2 cloves of garlic
- dollop of oil or butter
- 1L of chicken stock
- 1tbs mixed italian herbs
- 3tbs of cornflour mixed with water to thicken (sometimes needs more)
- 1 packet of gnocci (we prefer the smaller variety for the kids)
- 200g fresh spinach
- 250ml thickened cream
- salt and pepper to taste
1. Saute onion, carrot, celery and garlic in butter/oil until flavors mix
2. Add chicken breast to vegies to brown
(steps 1 and 2 are optional: you can just add both to slow cooker if short on time)
3. Add chicken stock, herbs, cornflour mix, salt & pepper to slow cooker with chicken and vegies
4. Cook on high for 4 hours or low for 6
5. Shred chicken breast and add gnocci, spinach and thickened cream 30-45mins before serving
6. Serve with fresh bread (or we like to put it on brown rice for the kids)
