Saute the onion, garlic and celery until just soft
Add stock and gently scrape vegetable bits off the bottom of bowl
Add carrot, sweet potato, butternut, zucchini, squash, cauliflower, mushrooms, tomatoes, pasta sauce and bay leaves to bowl
Cook for 8hrs on LOW (Breville 7L slow cooker)
Season to taste with salt and cracked pepper
Add spinach and stir through, cook for a further 30 mins or until spinach has softened
Serve with your choice of pasta
