Thai Coconut Chicken
A delicious mild curry that is super easy to make. This curry is loved by my whole family, even the fussy kids.

Ingredients
1 - 1.2kg whole chicken thighs
400ml can coconut milk
2 tsp fresh/jar ginger
2 garlic cloves finely chopped or crushed
1 heaped Tbs of red curry paste
1 Tbs fish sauce
2 Tbs brown sugar
1 pkt French onion soup
Instructions
Coat chicken thighs in plain flour and place in slow cooker.
In a jug, mix together remaining ingredients.
Pour over chicken.
Cook on low for approx 4- 5 hours
