Beef and Vegetable Easy Casserole
Budget friendly with simple flavours. Any veggies on hand could be used. Could easily be converted to a curry by adding curry powder to the stock.

- 1kg Casserole Steak - cubed (I used Gravy Beef)
- 1 Large Onion - diced
- 3 Cloves Garlic - crushed
- 2 Carrots - sliced in rings
- I Medium piece Orange Sweet Potato - sliced into rings
- 1 Medium piece White (or Purple) Sweet Potato - sliced into rings
- I head Broccoli roughly cut up
- 10 Brussel Sprouts
- 2 Cups of Beef Stock
- Approx 1/2 cup Plain Flour
- 2-3 tablespoons of Gravox Supreme powder
- 2 tablespoons Italian Dried Herbs
- Salt & Pepper
Make stock if using powder stock base
Prepare all veggies
Coat beef generously in flour, Gravox, and salt and pepper all mixed together
Add beef to slow cooker in layers alternating with veggies
Add stock. Quick stir to combine.
Cook 7 hours on Low stirring 2 or 3 times during cooking.
Serve with rice & crusty bread.
