Saucy Summer Chicken

A lovely fresh chicken dish with the goodness of spinach and the juicy bursts of cherry tomatoes to perfectly compliment the chicken. We served ours with steamed broccolini and sweet potato mash

Ingredients
 

  • 1kg chicken thigh fillets
  • 1 x 420g can condensed cream of chicken soup
  • ½ cup tomato sauce
  • 2Tblsp Worcestershire sauce
  • ½ tsp each of salt and cracked black pepper
  • 1 x 250g punnet cherry tomatoes
  • 60g baby spinach
  • 1Tblsp corn flour mixed with 2T tap water

Instructions
 

  • Add raw chicken fillets to slow cooker
  • Combine soup, sauces, salt and pepper and pour over
  • Cook on low for 4hrs low
  • Add tomatoes and continue to cook for additional 30mins
  • Combine corn flour and water to slurry and stir through to thicken
  • Add spinach and allow extra 10mins for spinach to wilt then serve
