Saucy Summer Chicken

A lovely fresh chicken dish with the goodness of spinach and the juicy bursts of cherry tomatoes to perfectly compliment the chicken. We served ours with steamed broccolini and sweet potato mash

Ingredients
 

  • 1kg chicken thigh fillets
  • 1 x 420g can condensed cream of chicken soup
  • ½ cup tomato sauce
  • 2Tblsp Worcestershire sauce
  • ½ tsp each of salt and cracked black pepper
  • 1 x 250g punnet cherry tomatoes
  • 60g baby spinach
  • 1Tblsp corn flour mixed with 2T tap water

Instructions
 

  • Add raw chicken fillets to slow cooker
  • Combine soup, sauces, salt and pepper and pour over
  • Cook on low for 4hrs low
  • Add tomatoes and continue to cook for additional 30mins
  • Combine corn flour and water to slurry and stir through to thicken
  • Add spinach and allow extra 10mins for spinach to wilt then serve

  1. Made this for the first time yesterday and it was delicious! I used a mixture of thigh and breast and everything was cooked perfectly. Served on rice. Will definately be making this again.

  3. Tried this for the first time tonight. It was so easy to put together, and while it tasted lovely, I felt it needed a little more oomph. My husband enjoyed it. We served it with rice tonight, I might try it with mashed potatoes tomorrow night…

    Made this today. Added minced garlic cause myself and my customers love garlic….
    Served with rice and a four bean mix salad
