Sweet Chili Chicken
Serving: 4
Ingredients
- 6-8 chicken thigh cutlets (or 1kg chicken drumsticks or even thigh fillets if you prefer)
- Flour to dust chicken
- 1/4 cup apricot jam
- 1/4 cup Tomato sauce
- 1/4 cup Soy sauce
- 1/4 cup Sweet chilli sauce
Instructions
- Add chicken and flour to a bag and shake to coat.
- Add floured chicken to slow cooker.
- Combine all other sauces in a small jug and pour over chicken
- Cook on LOW for 4-6hrs or until cooked through (6 for bone in pieces, 4 for fillets)
- Serve with mashed potato and steamed vegetables or it goes great with rice and stir fry vegetables too
- This dish isn't spicy and our children all love it ?

I haven’t tried it myself but I think the flavours would go nice with beef 🙂
