Spanish Chicken
So much flavour - So little effort to prepare! Great LOW CARB option too 🙂
Serving: 6
Ingredients
- 2 tsp olive oil
- 1 chorizo sausage, halved length ways then sliced
- 1 red onion, sliced
- 1.5kg of chicken drumsticks
- 400g can of cherry tomatoes in juice
- 1 red capsicum, sliced
- 2 tsp smoked paprika
- 1/2 cup chicken stock
- 100g mixed green and black pitted olives
Instructions
- In a searing slow cooker (or fry pan) sear the onion and chorizo in oil for approx 5-10mins
- In slow cooker combine these with all other listed ingredients except the olives
- Cook on low for 5hrs
- Add olive and allow to cook for additional 30mins
- Serve with couscous
Notes
- This recipe, inspired by similar oven recipes, is a little spicy so for the little people in our house we just left the chorizo and olives off their plates when serving

Loved this recipe, easy to do, added steamed green beans with the olives in the last 30 minutes. Next time thinking of adding some chillie flakes to give a bit more spiciest. Served with rice.

I’m sorry I didn’t see your comment until today Louisa. I would certainly recommend the longer on low if you get the time 🙂 But it can be sped up on high for some of it
Not a Chorizo fan. Could Salami be substituted?
Do you like other spicy sausages of that kind?
Made this and absolutely loved it. Added a cornflour slurry at the end to thicken it a bit. Served with rice.
