Slow cooked beef and red wine casserole

Tender beef with lovely flavours even if your not a lover of red wine I am sure this dish will have you wanting a second helping !

Ingredients
 

  • 600-800grams chunky diced beef
  • 4x carrots chopped
  • 5x mushrooms sliced
  • 2x brown onions sliced
  • 1tsp butter.
  • 2x tsp garlic
  • 1x Rosemary sprig or 1tsp of dried
  • 2x thyme sprig or 2tsp of dried
  • 2x bay leaves
  • 2tbs of soy sauce
  • 2tbs Worcestershire sauce
  • 1tbs tomato paste (optional)
  • 1/2 cup of red wine (I use pinot)
  • (if you like a stronger red wine taste you could use a full cup and less stock)
  • 2x cups of beef stock (salt reduced is best )
  • *Your favourite gravy powder see recipe instructions *

Instructions
 

  • Brown beef in a fry pan (optional)
  • Add all ingredients into the slow cooker
  • and cook on low for 6-8 hours or high for around 4 hours.
  • Make sure the beef is tender if your happy with it thicken the sauce with your favourite gravy powder.
  • I use two teaspoons mixed into 2 tablespoons of warm water and repeat about 3-4 times until I'm happy with the consistency and taste.
  • Season with salt and pepper and remove herbs before serving with creamy mash potato

    I tried this recipe used probably double the beef(topside roast), used dried herbs all I could get, and used a Cab/Sav was absolutely amazing! Highly recommend! Thanks for sharing!

    Absolutely mouthwatering gravy! I doubled the meat but with the amount of gravy I really could have tripled the meat. Bloody delicious, will definitely do this recipe again!

    I cooked this for the first time yesterday, we loved it. I used 1 cup of red wine, and added a beef stock cube with no water as I had no beef stock, and I mixed the gravy powder with some of the liquid instead of adding it to warm water. Will definitely be a regular for us.

    Bloody beautiful, have made it a few times now and everyone who has eaten it has asked for the recipe. I now triple the quantities as it freezes and reheats so well also. I use a good quality Shiraz and dried herbs and it’s absolutely superb. Favourite slow cooked meal by far.
