Potato & Sweet Potato Bake
Serving: 6
Ingredients
- 4 Potatoes, thin sliced
- 1 large Sweet Potato, thin sliced
- 1 Onion, thin sliced
- 1 Tablespoon Minced Garlic
- 2 rashers diced bacon, rind removed
- 1 Tablespoon Mustard
- 1 can (no water added) condensed cream of chicken or cream of mushroom soup
- 1/2 - 3/4 cup Grated Cheese
Instructions
- Spray bowl of slow cooker with oil spray
- Layer bottom with potato slices, then sweet potato slices, then potato slices until you have used half of all of them
- Top with diced bacon and thin sliced onion
- Layer with remaining sweet potato and potato until all used up
- Mix soup with garlic and mustard and pour over top
- Cook on low for 4-6hrs depending on your cooker (see note)
- Half an hour before serving top with cheese and continue to cook until melted
- *Notes*
- - Cream of soup can be exchanged for other cream of soups, eg cream of asparagus or cream of celery etc for different flavours
- - I cooked mine in my medium 3L slow cooker which is twice as slow as my 6L large one so depending on your cooker you may need to adjust time.
- - Cook until potato is tender to fork and not crunchy then add the cheese to melt
