Peanut Satay

Mild Satay which even the kids will love

Ingredients
 

  • 2 tbsp sweet chilli sauce
  • 1 Tbsp ginger
  • 1 tsp coriander
  • 1 Tbsp garlic
  • 1 Tbsp Fish Sauce
  • 1 cup crunchy peanut butter
  • 400ml coconut cream
  • 500g frozen stir fry veg
  • 500g diced beef
  • 1 Tbsp sugar
  • 2 Tbsp soy sauce
  • 1 spring onion sliced
  • Salt and Pepper to taste

Instructions
 

  • Stick everything except for the veg into the slow cooker and place on low for 4 - 5 hours or until meat is tender. Add the veg in and cook for a further hour on low.
  • Serve on your favorite rice or egg noodles
  • This is a mild satay, to get more bite switch the sweet chilli for real chilli

    Tasted amazing, both my husband and myself absolutely loved it. Instead of frozen veggies I used fresh carrots, onion, zucchini, cauliflower and broccoli chopped up, was so delicious.
