Naked Chicken Parmigiana

Super easy, super tasty ... naked parmigiana .. like regular parmi but without the crumbs 🙂 Still the cheesy tomato goodness you expect!

Ingredients
 

  • 1kg chicken thigh fillets
  • 1 x 500g bottle of Napoletana or Parmigiana sauce (I used chunky tomato with herbs)
  • 200g grated mozzarella cheese

Instructions
 

  • Place raw chicken directly into slow cooker
  • Pour over the sauce
  • Cook on low 4hrs
  • If you prefer, before adding cheese, remove some of the excess cooking liquid by scooping it out (optional)
  • Then top chicken with cheese
  • Use tea towel trick after cheese goes on and cook for additional 15mins or until cheese melted
  • Serve with chips and salad or side veg

  1. Tried this tonight and it was scoffed down by everyone! I just used a tin of crushed tomatoes and added some Italian herbs and garlic and bacon. Really easy and will definitely make it again! 🙂

  2. Wow this meal is just amazing !! I added a slice of ham to each thigh and then followed the recipe and served them with chips, veggies and garlic bread. All 5 family members were extremely pleased with the result and licked their plates clean. Definitely a new family favourite at our place, thanks for yet another brilliant recipe Paulene 🙂

    Delicious! I added ham and left the lid off for the last hour, temp high to reduce the liquid. Also left the lid off to melt the cheese. Such a versatile recipe, simply change the sauce to change the flavour! Next time i am going to try romano sauce and add bacon & olives.

  6. This meal was delicious and so so easy to make. It was a big hit with my family. Definately going to do it again. The left over sauce is in freezer for my spag bol i think.

  7. Yum, enjoyed by the whole family. Will now become regular in my house. It’s nice to find something that everyone eats and enjoys especially with fussy kids. I added sliced ham and a few Italian herbs. Kids thought it tasted like a pizza so I’ll take that as a win.

  9. I made this and it was amazing. I added bacon and used chicken breast because i like the breast better. I also used herb and garlic pizza sauce.

    I make this using chicken breasts as thats what we prefer, it is absolutely divine! And it takes 30 seconds to put on!

  11. I made a BBQ version of this one
    Swapping the tomato based sauce for a small bottle of BBQ Rib sauce and I added a diced onion over the chicken fillets also
    Still added the cheese at the end
    The kids especially LOVED this version (we are a bbq over tomato fan family here lol)
    When I make it again I think I’ll stick to the BBQ version 🙂

    Easy and delicious! Used a jar of bolognaise pasta sauce and breast fillets. I actually finished it with smoked ham and topped with cheese but under the grill as I’m planning to shred the leftover chicken into the sauce to use for burritos tomorrow night

  13. I enjoyed this and have lots of leftovers as my partner wasn’t too keen. Next time I’m going to try Paulenes BBQ version. I also put it into the oven for a couple of minutes to brown the cheese.

  14. First attempt at this today, and it was amazing!!!! So simple and easy, 15 mins wasn’t enough to melt the cheese all the way, so put under the grill for a couple of mins and it was sensational. It a must try everyone ????

    Loved this recipe . So Easy. I did the tea towel trick and also removed some of the sauce but mine still seemed a bit “watery”, Would love some recommendations for he tomatoe sauce. Will definitely be making again.

  16. How does this not stick to the bowl? If I did this in my SC I would end up with a mess of chicken and sauce stuck like glue! :-\

  17. Super tasty, super easy! Added bacon as well . A keeper for sure. I did spoon out some of the sauce before covering with cheese.

  19. I used chicken breast (still havent ever used thigh and kinda too scared), needed to remove the liquid at the end but it was so yum!! And super easy

  20. Easy and delicious! I used chicken breast, cooked on low 4 hours and it was perfect, i added cheese during the last hour. Went down well with my young kids, will be making again

  23. Winner Winner Chicken Dinner! I did the BBQ version I used 2 bottles of 333’s bbq rib sauce (my favourite) served with wedges and garlic bread. Delicious

  24. One of our super easy favourites, always make extra chicken fillet for Husband’s lunch the next day. Very tasty

    I should’ve scooped out more of the liquid, but other than that, delicious

  26. Love it and so do my teenage boys! I make my own homemade tomato sauce so it is low carb, rather than buy a jar sauce. It’s on regular rotation in our house.
