Mini Quiches

Mini Quiches

Ingredients
 

  • 6 eggs. whisked
  • Dash of milk
  • 100g diced bacon
  • 2 mushrooms fine diced
  • 1/2 red capsicum fine diced
  • 1/2 cup of fine diced green shallots
  • Salt and cracked black pepper
  • 1/2 cup grated cheese

Instructions
 

  • Combine all ingredients except cheese
  • Divide mixinto silicone muffin/cupcake cases
  • Sprinkle cheese over each
  • Place filled silicone cases gently into slow cooker (directly onto thebase of slow cooker - no water or anything needed under them)
  • Place tea towel between slow cooker and lid to absorb moisture
  • Cook on low for 1-2hrs or until set
  • *Time varies between slow cookers*

    Made it for my staff at the office and the plate was empty in a flash. They loved it!!!! Looks like I’ll be treating them again soon enough.

  2. Any ideas for something instead of bacon which we don’t eat or should I just leave it out and not replace?

      How about ham? Or some diced cooked chicken even if you prefer 🙂 Or you could leave it out too

  3. The Mini Quiches were easy to prepare. Had them with some vegetables. Very tasty.
    Leftovers for lunches.
