Low Carb Turkey Meatballs
A creamy meatball delight that hits all the boxes for a LOW CARB slow cooker option 🙂
Ingredients
- 500g Turkey Mince
- 70g Flax Almond Baking Meal
- 1 egg
- Cracked black pepper to taste or 1/2 - 1 tsp
- All purpose seasoning 1/2 - 1 tsp
- 2 tsp butter
- 300ml cooking cream
- 1 tbsp minced garlic
Instructions
- Combine turkey mince, egg, seasonings and almond meal into a large mixing bowl and stir to combine well
- With clean hands roll into meatballs
- I made 25 small golf ball sized balls
- Add butter to searing slow cooker to lightly brown meatballs in
- Gently add meatballs once butter has melted
- Turn after 5mins being very careful not to break apart
- After another 5mins move to slow cooking setting (it's ok if not ever side of meatballs is browned)
- Combine cooking cream (it's a type of cream that resists splitting when heated) and garlic and pour over meatballs
- Slow cook on low for 1.5hrs with The Tea Towel Trick to prevent water dripping into cream

- On carb free konjac spaghetti/noodles/angel hair
- On zucchini zoodles
- With a side salad
- With a plate of low carb vegetables
- Or even a few on their own with a dusting of crumbly cheese

I made this it was very yummy ,almond meal was expensive so I used breadcrumbs, delicious.
