Loaded Spanish Bake

A delicious one pot meal combining potato bake, chicken, chorizo and eggs for a Spanish inspired meal the whole family will love!

Ingredients
 

  • 5 medium washed potatoes, thin sliced
  • 400g can crushed tomatoes
  • 2 teaspoons of minced garlic
  • 1 teaspoon of dried oregano
  • 1 red Spanish onion, sliced
  • 2 tsp chicken stock powder
  • 1 large chicken breast (400g)
  • 1 chorizo sausage (125g), sliced
  • 3 eggs
  • Non stick oil spray

Instructions
 

  • Spray slow cooker bowl with non stick oil spray
  • Layer all sliced potatoes on bottom of slow cooker bowl
  • Combine canned tomatoes with garlic and oregano and pour this over potato slices
  • Sprinkle chicken stock over the tomato layer
  • Spread onion slices this
  • Take large chicken breast and cut it in half length ways, then slice each half into thin strips.
  • Spread chicken slices over onions
  • Spread chorizo slices over chicken
  • Cook on HIGH for 5hrs
  • Make 3 indentations along top of bake and crack and egg into each one
  • Cook until eggs set - approximately another 15mins
  • A one pot meal for the whole family!

  1. I tried this for my egg-loving husband and his eyes lit up when I dished this onto his plate.
    I cooked for 2 hrs high & 2 hrs low and my potatoes still cooked perfectly.
    Next time I think I will add cream to my tomatoes to get that ‘creamier’ feel to it to suit our tastes, but the flavours together were really lovely

  2. I made this today and It was very very nice. The flavours were just beautifulI. It was very easy to prepare and my kitchen smelt awesome. My hubbie liked it and cleaned his plate. The only change I did was on plating, I added a little sour cream and I felt that it completed the dish nicely. Will make this again.

  3. Was looking for an easy dinner and came across this. Had everything I needed, so threw it all in and everyone loved it! The kids even went looking for seconds! I served with salad and will probably put some sour cream on to serve next time and add a bit more garlic and herbs, but a definite winner and will be made again 🙂

  4. Absolutely AMAZING! A weekly dinner in my house, my fussy partner loved it and it’s perfect for Uni students on a budget. I leave the egg out and dice the Chorizo and it’s still amazing!

  6. Hi Pauline, could I do this with a creamy potato bake base instead of using the tin of tomatoes? Can’t eat tomatoes but love everything else in the recipe! Thank in advance 🙂

    1. Hi Eileen… so do you mean like a jar sauce for potato bake is that what you mean? I think that would work so long as you are keeping the same liquid volume 🙂 My only concern would be that it’s creamier and less liquid so just watch it doesn’t burn on the high heat setting

  7. Delicious… made this for the first time today. I added a little paprika to the tomatoes & cheese to finish it off… we will defo make this again & again & again!

  8. Not sure where this went wrong as I followed the instructions but found it watery and not to my taste even with sour cream added as suggested by others
