Lemon & Herb Shredded Chicken & Broth – Low Carb

A low carb lemon & herb shredded chicken using a bone broth concentrate that not only gives you chicken but a broth to drink at the end that's sex in a cup!

  • Prep: 10 mins
  • Cook: 3 hrs


4 chicken thigh fillets

2 good spoonfuls of Lemon & Herb bone broth CONCENTRATE (I use Meadow and Marrow Bone Broth brand that you can purchase online - link below)

1/4 lemon (cut in two wedges)

2 tsp cracked black pepper

1/2 cup water


1Add all ingredients to a 1.5L slow cooker

2Cook on low for 3hrs

3Remove lemon pieces and discard

4Remove chicken from both and shred

5Perfect for use in salads, sandwiches, tacos or pizza toppings

6Use within 48hrs or freeze in portions

7Retain broth and drink hot for a nutrient dense bone broth drink to die for!

Instead of lemon & herb broth, I used 1 cup homemade chicken bone broth, juice of 1 lemon, 2 large cloves garlic & Italian herbs. I put the whole squeezed lemon peel in with the other ingredients listed in the recipe. Shredded the chicken & served with rice & green veg. Reserved the broth & drank as a tea. It tasted amazing. Will make this again

Absolutely delicious. Easy and quick to make, I had both afternoon tea (broth) and dinner (shredded chicken w/salad) organised at the same time. Will definitely be making this again.
