LAMB SHANKS
Serving: 3
Ingredients
- 3 carrots- chopped
- 1 onion- sliced
- 2T minced garlic
- mixed herbs
- 2 big cans on "big red" tomato soup
- 1 cup of beef stock
- 3-6 Lamb shanks (browned with flour first)
- 1 cup red wine
- Parsley to decorate (optional)
- Corn flour to thicken sauce
Instructions
- Place all ingredients in slow cooker
- Cook on low for 6hrs

If only doing 3 shanks do I halve this recipe?
No …. the recipe says it’s fine for 3 also 🙂
Any suggestions if don’t have the red wine?
Any you could use stock instead
This is a must dish to try – so full of flavour & no effort. The only adjustment I made was in the liquid – I used the soup & 1/2 cup beef stock in total. Thoroughly enjoyed & so glad there’s leftovers for another meal??

Made this last night. I only used 1 can of soup and maybe a little more stock. Had 4 lamb shanks and just added more vegetables. Added mushrooms and some potatoes. Loved it and was tasty as well.
