Honey Mustard Chicken (Weight Watcher Friendly)
Serving: 6
Ingredients
- 1kg skinless chicken thigh fillets
- 4 tbsp mild American mustard
- 4 tbsp honey
- 1tbsp cornflour and a little water to thicken
Instructions
- Place chicken thigh fillets directly into slow cooker (nothing else added) for 2hrs
- At this point I removed all but 1/3 cup of liquid out of the slow cooker bowl (the liquid that had come from the chicken)
- Combine honey and mustard and pour over chicken.
- I also roughly broke apart the thigh fillets at this point into smaller pieces (you can do this with a wooden spoon as the chicken breaks easily when cooked) or you may wish to leave them whole
- Continue cooking on low for an additional 2hrs
- 15 mins before serving, combine cornflour with a splash of water until a runny paste and add this to slow cooker and stir to combine. This will thicken up the sauce prior to serving.
- This dish equates to 8.5 pp on the Weight Watchers program
- Served in this photo with a garden salad and Moroccan Vegetable Medley

This one is a winner for sure. Something so easy to throw veggies and rice .
Is the original 2 hours of cooking on high or low? Thanks!
Low
Hence the continue cooking on low later 🙂
Can this be cooked over 8hrs? My slow cooker is a multi functoon on and the setting is 8 hrs only?
I’m afraid that would be too long for this one 🙁
That’s a draw back of multi cookers and why I recommend actual slow cookers so that you are not restricted in this way x
