
Goodness Soup
Slow cooked pumpkin, bacon and vegetable soup
Equipment
- 6L slow cooker
Ingredients
- 1 kg pumpkin, peeled and cubed
- 500 grams sweet potato, peeled and cubed
- 2 potatoes, peeled and cubed
- 1 leek, sliced
- 500 grams short cut bacon, roughly chopped
- 1 litre liquid low sodium chicken stock I use Massel brand
- 1 tsp Curry powder I use keens brand
- 1 tsp Cracked black pepper
Instructions
- Combine all ingredients into slow cooker and cook on low for 8hrs
- Blitz with stick mixer for lovely thick soup
- Serve with crusty bread, garlic bread or cheese and bacon bread

This soup is so YUM and full of goodness. I added some left over capsicum and mushrooms. It’s now on my rotation list

This was tasty even hubby who is not big on vegetables loved it. Put in mushrooms as I love them and the little bit left over put in a container for the next day. Weekly for this one for sure.

This was really tasty my daughter and I loved it 🙂 I added a tiny bit of garlic to it and then when I blitzed it up I added a splash of milk for a bit of creaminess 🙂
