Finger Lickin’ Mushroom & Bacon Chicken
Serving: 4
Ingredients
- 1kg skinless chicken fillets (I always use thighs for slow cooking but you can use breast)
- 1 can condensed cream of mushroom soup (no added water)
- 1 diced onion
- 3 cloves garlic minced
- 1 dry pkt French onion soup mix
- 200g diced bacon
- 3 tbsp tomato sauce/ketchup
- 6-8 chunky cut mushrooms
Instructions
- Place chicken in slow cooker.
- Add onion and mushroom.
- Combine all other ingredients and pour on top.
- Cook on low for 4-6hrs depending on your slow cooker.
- **NOTES**
- -If using breast meat I would use 2 cans of soup rather than one to combat the dryness of breast
- -I cooked mine all day on low (8hrs) because my medium slow cooker is not as fast as my large one. In my large one it would have been done in more like 4hrs so adjust times to suit your own cooker
- -Serve on pasta or rice or with mash and veg

Excellent as a pie filling!
Love this recipe so simple, quick and easy. I find it hard to get things that all 3 of us like this is one of them so it’ll be added to our monthly meal plan.

I used 1. 5 kgs of chicken.
Added extra garlic. Browned the meat and a quick saute of the veges.
Fussy partner says 11/10!! So many left overs. And even better the next day ❤️

Fast, simple and tasty!
Substituted onion granules and garlic granules for the diced onion and crushed garlic and bacon powder seasoning for the 200g bacon.
Also used the onion soup mix recipe from the SCC recipes instead of a packet.
