Easy Slow Cooked Chicken Pesto Pasta

Ingredients
 

  • 4-6 chicken thigh (leave whole)
  • 1 cup spinach
  • 6x sundried tomatoes sliced or cherry tomatoes work well
  • 1x tsp garlic
  • 300ml of cream
  • 1 cup chicken stock
  • 1 jar of basil pesto (recommend barilla)
  • Parmesan about 1/4 of a cup
  • Salt and Pepper

Instructions
 

  • Place all Ingredients (apart from spinach) into slow cooker and cook on high for 3-4 hours add the spinach about 30 minutes before serving just to soften it.
  • If cream splits add 1tbs or cornflour to 1-2 Tbs or water mix and pour into slow cookers and it should fix that problem. Alternatively you can add the cream when you add your spinach.
  • Serve with pasta cooked as per packet directions and a good sprinkle of Parmesan
  • I almost used a full packet of penne this made enough for 4 people

    This was utterly amazing! Definitely going to become a regular in our house from now on when we are in a hurry… We used Gluten free pasta, which didn’t make any difference to taste, it was still delicious!

  3. Family Favourite my 8 yo loves this one. I left out the sun dried tomatoes/ tomatoes and we used the red pesto .. was so full of flavour. We had leftovers for work lunches the next day and it was even better.

      Yes 🙂 I find breast more dry to slow cook but definitely still works if you prefer breast

    Made this tonight and i am far from disappointed! My partner said it’s the best thing I’ve ever cooked and went back for seconds, the entire family loved it.

    I served it with cheddar cheese instead of parmesan , and added extra spinach. And of course, garlic bread on the side!!

    Will definitely make this again!

    Seriously the best dish i have come across on this site. Kids love it every time i make it. I did try using a tomato pesto but it was not great. Will be sticking with the traditional basil pesto.

    Could you substitute coconut cream for the cooking cream and also could you add the uncooked pasta to the slow cooker at the start??

  8. Omg, this has become another favourite slow cooker meal! It’s restaurant quality. Could easily have this twice a week. The one year old loved it as well which is always a win ? delicious!

  9. Fantastic and so easy to make! I love adding a bit of bacon, onion and avocado, it works really well with this dish. The kids love it and it’s just so simple. I prefer the jar of Sacla pesto 🙂

    Beautiful recipe, I cut down on the fats, cream etc as plenty of oil in the pesto. Still very tasty,and great for big group of people.

      It would significantly change the taste of the dish … but it would ‘work’ as such. Just very different to how it’s intended

  11. The recipe says everything in except the spinach, so do I put the parmesan in with It all? Or is the that on the list because that’s sprinkled on top at the end

      As per first step, everything but spinach goes in at the start 🙂

    Lovely meal. Even my dad (who doesn’t usually eat chicken) enjoyed it as well. I did add some basil leaves for extra flavour.

    Even my fussy toddler loved it and ate heaps and she is really hard to cook for.

    Absolutely Delicious !!!
    Tried for the first time today and hugely impressed. The chicken was super tender and just pulled apart so easily. Loved the flavours, I used cherry tomatoes as I forgot to buy sundried.
    Next time I’ll add more cherry tomatoes and more spinach as there was heaps of sauce.

  18. This is always a family favourite!!! I brown the chicken thighs on the pan with the oil of the stuffed cheese red baby capsicums that I add to this, gives it a nice flavour! I also add cashews to this recipe and it just works! Super yummy!

      I think there is enough of everything else to leave that as is and just boost the chiken if you need to Bec 🙂 The only thing I’d maybe add more of for that is extra tomato and spinach so each serve has enough 🙂
