Diet Vegetable Soup (peel a pound)

  • 1 cabbage
  • 4 carrots
  • 1 zucchini
  • 4 onions
  • 1 celery
  • 1 capsicum
  • 2 packets of chicken noodle soup


  • Cut all vegetables up into medium pieces, adding all ingredients to the slow cooker including the packet soup
  • Cover all ingredients with water to suit your slow cooker size and heat
  • 2 hours high then 2 hours low
  • Eat as is or blend if desired

  1. I have made this soup today and it was delicious. I did add some dried basil, thyme, some chilli and a leek cause it needed to be used up thanks for this wonderful recipe

  2. I’m just wondering if there is any liquid like water or chicken, vegetable or beef stock to be added to the soup? Thank you in advance

  3. I’m wondering to make this really healthy omit the chicken soup packets use a home-made chicken stock plus extra water with a really good quality stock paste for extra flavouring it wouldn’t necessarily need the soup packets would it ?

    Made the soup today , I added choko instead of capsicum as i’m not a fan , I cooked it longer than what recipe says because I cut my veg into large chunks and with 20 minutes to go I added some gyozas to it , absolutely yummy , will definitely be making this again
