Creamy Tomato & Spinach Chicken Drumsticks

Chicken drumsticks in a creamy sun dried tomato and spinach sauce that will have you licking your plate clean! Low carb friendly too πŸ™‚

Ingredients
 

  • 2kg chicken drumsticks (12)
  • 1 tsp cracked black pepper
  • 1 tsp onion powder
  • 2 tsp smoked paprika
  • 300ml cooking cream
  • 1T minced garlic
  • 1T cornflour
  • 150g semi dried tomatoes
  • 60g baby spinach leaves
  • 1/2 cup grated fresh Parmesan

Instructions
 

  • Add chicken drumsticks into slow cooker
  • Sprinkle with the pepper, onion powder and paprika
  • Use a stick blender or other processor to blend together the cooking cream, garlic, cornflour and semi dried tomatoes until all blended then pour over chicken
  • Cover with tea towel trick and cook on Auto for 4hrs or Low for 5-6hrs
  • Remove chicken from cooker gently into a bowl or tray, using a plastic whisk give the sauce a good stir, add spinach and cheese and stir again πŸ™‚
  • Return chicken to slow cooker and coat well with sauce and cook for an additional 30mins low

Notes

  • You could reduce the number of chicken drumsticks to 1kg but keep the rest the same
  • Be sure to use cooking cream if possible as it doesn't split when heated for long periods
  • I served mine on a creamy mash and our recipe for Sweet Chilli Butter Broccoli as a side veg
  • Low Carb friendly

  3. Hi Paulene, if i swapped the semi dried tomatoes for a tin of diced tomatoes, would i terminally effect texture or flavour?

  4. Instead of using drumsticks, I used 4 chicken breasts and just shredded them. And put it on a base of mash.
    Whilst I enjoyed it very much, I think next time I would rather try putting it on some pasta or rice.

    I’ve just blended in ther thermomix the cooking cream, semi dried tomatoes, garlic and cornflour. It’s come out like paste consistency, was this correct ??? Not sure if it was meant to be more runny

  8. Very scrumptious and full of flavour.
    I did sear the chicken legs in my searing slow cooker. Also pulled meat off the bone before adding back to bowl (mainly because I overcooked it ?)
    Simply divine
    Most definitely having again!

  10. I tried this recipe. It turned out delicious. I cooked it for a total of 6 hours. Chicken was falling off the bone. I served it with mashed potato and steamed vegies.

    It Was a Very easy recipe, hubby and all 3 kids loved it we had it with mash and veggies

  13. Wasn’t a fan. My two teenagers didn’t eat it either. They both took one bit of a drumstick and didn’t eat anymore. I think whenever cooking cream is involved, the recipe doesn’t suit our taste as a family. It’s too rich.

  16. I mixed the cream & sundried Tom. , cornflour etc but turned out like paste so can this still be used & will it melt down with the rest once cooking on heat?

  17. Made this tonight with four large chicken breasts instead, and added in sliced onion as someone had suggested. Brilliant.
    Cooked for 4.5hrs on low, then did the extra half hour with the spinach and cheese.
    All plates licked clean!
    Absolute winner.

  21. nice recipe. loved all the ingredients. however, being in south texas where spices and
    peppers are used alot, I added pickled jalapena slices and instead of parmesan cheese I
    opted for oaxaca cheese instead.
    thats some good eating as we say here.
