Creamy Chicken with Asparagus, Bacon and Sun Dried Tomato
Serving: 6
Ingredients
- 1kg skinless chicken thigh fillets
- 200g diced bacon
- 100g sun dried tomato (in vinegar - patted dry)
- 1 x 250g block of Light Philadelphia cream cheese
- 2 tsp. minced garlic
- 1x 400g pouch of Taylor's Asparagus & Spinach Soup
- Salt and Pepper
Instructions
- Place all ingredients into slow cooker
- No need to pre brown or seal first
- Cook on HIGH for 2hrs then LOW for 3-4hrs
- Sauce didn't need any thickening as it was lovely and thick and creamy 🙂
- Serve on pasta or with creamy mashed potato and steamed vegetables

OMG….this dish was awesome! I cooked it on low for about 8 hours (while I was at work), stirred through a couple of handfuls of baby spinach leaves 30 mins before serving & served with rice. Served 4 generously & enough for 2 ‘leftover lunches’. Will definitely be a regular in our household ??

I got mine at Woolies back when I made this but you can also just use the Campbell’s concentrated asparagus soup too if you find that easier
You can also use the Heinz soup of the day 7 veg pouch soup – delicious
I used cream of asparagus tin soup. And breast fillets because they are cheaper. I shredded the chicken then left lid off for 30 minutes. Thickness of sauce was perfect. Dei should meal which I’ll cook again.
